Hello everyone! Once again, it is almost winter, and that means that things are starting to get cold (or at least as cold as it can get here in San Diego County). That means that many people are looking for recipes to make nice, hot dishes that will warm you up. Below is a simple chicken soup for you to make if you are seeking a simple yet good meal that you can throw together without too many ingredients. I make it every Thursday so that my dad can have the night off.
Chicken Soup Recipe
Ingredients
Soup stock for broth (various vegetable scraps)
1 chicken breast
½ box of red lentil pasta
1 bunch of collards
Instructions
Place the soup stock in a pot. Boil for 45 minutes. Get your ingredients out. Chop the collards.
Add the chicken to the soup. Cook it for 30 minutes.
Strain the soup. Fish out the chicken and cut it up. Add it back to the soup. Cook for 15 minutes.
Chop the collards and add them to the soup. Cook for 15 minutes.
Add the pasta, and add salt to taste. Cook for 7-9 minutes.
Serve.
